The harvest by hand is then the crowning of the know-how of the winemaker who deeply care for the exaltation of the grape variety and the pure expression of the terroir.

Nature is not betrayed in the winery and tradition is revered. The vinification is suggested by the specific nature of the vintage. The techniques seek to preserve the characteristics of the fruit: soft pressing in a vacuum, the selection of the yeasts, controlled temperatures, steel for the white wines and fine French wood for the red wines … And in the end they are bottled when the Moon is most propitious.
