Designation of origin: Doc Isonzo del Friuli.
Grape variety: 60% Merlot – 40 % Cabernet Sauvigon.
Average age of vines: 35 years.
Training system: single Guyot.
Yield/hectare: 60/Ha.
Winemaking: handpicked, the grapes are destemmed and carefully selected. Long skin maceration and frequent pump-overs. Fermentation in stainless steel tanks at a controlled temperature between 25° and 30° C.
Ageing: after the malolactic fermentation, it ages in French oak barriques for twelve months.
Colour: deep ruby with purple tint.
Bouquet: lightly herbaceous nose with notes of flowers and red fruits. Evident hints of cranberry, blackcurrant and notes of licorice.
Taste: on the palate it has a tannic structure, dry and bodied. The flavour is full of character and reminds the type of soil where it comes from, hence the name Sassirossi, “red gravels”.
Pairing suggestions: it goes well with different kind of recipe: from hearty first course dishes to fish, red meat, lamb, games and mildly aged cheeses.
