Designation of origin: Doc Isonzo del Friuli.
Grape variety: 100% Chardonnay.
Average age of vines: 32 years.
Training system: single Guyot.
Yield/hectare: 42/Ha.
Winemaking: hand harvest, destemming and careful selection of the best grapes, soft pressing, cryomaceration for 12 hours, decanting at a controlled temperature of 10-12°C.
Ageing: the alcoholic fermentation begins in stainless steel tanks and continues in 300 Lt. French oak barrels. The wine ages on the lees for 11/12 months with regular stirring, it is then bottled where it rests for a while before being released on the market.
Colour: straw yellow with golden highlights.
Bouquet: charming nose, with smoky and crusty notes. Hazelnuts, almonds and cashew, but also vanilla and cinnamon enrich a bouquet which is typical of the origin area.
Taste: fine balance between freshness and smoothness with a long elegant and aromatic persistence. Subtle hints of vanilla and spices elevate the flavours of the wine. The round mouthfeel is balanced by fresh and sapid notes.
Pairing suggestions: it is perfectly paired with spring herb risotto.
