Grape variety: Sauvignon Blanc (70% French clones – 30% Italian clones).
Average age of vines: 28 years.
Training system: single Guyot.

Winemaking: hand harvest, destemming and careful selection of the best grapes, soft pressing, cryomaceration for 12 hours, decanting at a controlled temperature of 10-12°C.
Ageing: after the alcoholic fermentation, the wine ages on the lees in stainless steel tanks for a period of time.
Colour: fine deep yellow with green hints.
Bouquet: Its characteristic aroma evokes the tomato’s leaf. Evident notes of sage and elderberry with tropical and citrus fruit echoes.
Taste: delicate and harmonic on the palate, a pleasant acidity to the finish invites a further taste.
Pairing suggestions: excellent if paired with maltagliati (=a typical pasta with an irregular shape) with San Daniele ham and zucchini.
