Grape variety: 100% Chardonnay.
Average age of vines: 27 years.
Training system: single Guyot.
Yield/hectare: 43/Ha.
Winemaking: hand harvest, destemming and careful selection of the best grapes, soft pressing, cryomaceration for 12 hours, decanting at a controlled temperature of 10-12°C.
Ageing: after the alcoholic fermentation, the wine ages on the lees in stainless steel tanks for a period of time.
Colour: fine deep yellow with green and golden highlights.
Bouquet: intense aroma which evokes fruity hints of banana, golden apple, notes of citrus fruits and flowers. Hints of fancy cakes and vanilla.
Taste: it is a very elegant and charming wine, dry on the palate with a long and aromatic persistence.
Pairing suggestions: excellent as an aperitif, it complements lean fish dishes, newly sprouted green herb risottos, aubergine gnocchi, pasta and fagioli soup.
